It really depends on what your Scaler/converter box is expecting (VGA modes? TV modes? 240p? 480p?); and whether you want full overscan (for compatibility with SD video platforms), a snug fit for a particular TV, or a safe amount of margin for more than one TV.
While Composite Video Out is very constrained, DPI/VGA Out is flexible. If you know a "mode line" that works on another platform it should be straightforward to convert it for Raspberry Pi 5. With the caveats that Pi 5 doesn't support Composite Sync or Interlace (at least, not without a separate converter).
