If I change /etc/fstab to match the serial number (ie: 192.168.1.46:/srv/tftp/629ea2e9), I'll then have:

Use the serial number. The update process doesn't know about the serial number directories so won't update properly. For Raspberry Pi OS Bookworm, the files are in /boot/firmware but I don't know what it'll be for Arch.
