I've got a couple of Pi's happily beavering away using older, now legacy operating systems. In one case, running a program accessing the GPIO using WiringPi, it'll take quite a re-write before I can catch-up. Chances are if I do do a re-write the next all new and better version will be released and I'll forced to keep up again.

All of my Pi's are on a limited access private network so there should a reduced risk of compromise given non-bleeding-edge security updates.

Years ago we had the philosophy of "If it ain't broke, don't fix it". I've had to chuck too many mobile phones and tablets because of the relentless charge of better and newer releases of Android and never see any real improvement.
