In order to avoid any confusion over which drive you are actually installing to, you can simply attach only the drive you wish to install to, and leave any others disconnected.

If you want to do a clean install on the SSD then you can use the existing OS install on the SD card to wipe the partition table on the SSD. Assuming you can connect an Ethernet cable to the Pi 5 and give it access to the internet, you can then boot the Pi 5 without the SD card inserted, and use Network Install to install Raspberry Pi OS to the SSD. (Some other OSes are also available via Network Install).
