Don't know about Wayland, but you can do this by switching to X11 and using "virtual VNC" connections. You won't have GPU acceleration, of course.
I believe that RealVNC's virtual VNC capability still works with X11, but not sure about the licensing, since they seem to be tightening things up quite a bit to extract additional revenue.
However, you can use either TigerVNC or TightVNC following this: https://github.com/gitbls/RpiVNCHowTo
And, of course, you can easily configure virtual VNC sessions customizing an IMG using https://github.com/gitbls/sdm
