Something funny must be going on with yours...

If you have a USB3 hub, please try booting Ubuntu 23.10 with your SD card + USB adapter plugged into the hub instead of directly into the Raspberry Pi 5.

I've had two powered 4-port USB hubs (different manufacturers) plugged into a Raspberry Pi 4B (4GB) development system for the past 5 years. There's never been a problem running a multitude of operating systems on a multitude of a USB devices plugged into either hub (including Ubuntu 22). In early November, I replaced the Raspberry Pi 4B with a Raspberry 5 (8GB), changing nothing else. The Raspberry Pi 5 has been just as reliable, running anything from USB via either hub except for Ubuntu 23.10. Ubuntu 23.10 will run plugged directly into either USB3 port on the Raspberry Pi 5 with either hub plugged into the other USB3 port. Ubuntu 23.10 also fails to run using only a non-powered hub.
