I'm also experiencing these issues running the official touchscreen display on the latest Bookworm image (coincidentally also for Pianoteq).
It seems that the new Wayland-based Wayfire window manager is very buggy when it comes to touch input and frequently crashes the desktop, this is extremely disappointing for what is supposed to be an officially supported display (not to mention the lack of multi-touch support).
The workaround for the moment is to switch to the previous X11-based Openbox window manager by running sudo raspi-config in the terminal and selecting the X Backend in the Advanced Settings:
