To clarify the reason for the question, if you don't connect an HDMI display to a Pi it defaultsto analog video at a very low resolution.What screen resolution is the Pi set to?
Teamviewer shows you the full desktop, but if the remote screen is very low res you may see something like your example screenshot.
When you had someone connect an 'HDMI cord' did they see a normal hi resolution desktop on the HDMI display?
If the Pi didn't detect the HDMI display and adapt it's display to suit it would have no effect on what you see on TeamViewer.
You set the display resolution in Pi from desktop menu Preferences, or commandline rapi-config or editing config.txt.
