Excellent! Thank you for that bit of wisdom, I do get all the expected output now, with some "out of order" sequences (expected), but all printf strings are complete, no scrambling of data within any one printf call, proving your assertion that it is indeed thread safe. There won't be any printfs in the actual core1 code, I just stuck them in to see if I had core1 running and could send/rcv on the fifos as expected. First adventure with the multicore stuff...
