To be clear you are sure you are booting from this NVMe SSD and it is the only storage in the system? From the information you provided, it may not have installed correctly and you may actually be booting from a different storage media.
I followed the same approach to move from a USB attached SSD to a NVMe SSD (using the same Pimoroni BASE). Once the copy completed, I changed the boot order, removed the USB attached drive and rebooted. It definitely sees both partitions on the SSD, and reports on the full capacity of the SSD.
